Roast Salmon with Smashed Wasabi Potatoes and Sesame Broccolini

The salmon and potatoes are a tray bake recipe, one of my favorite ways to get dinner on the table. You could conceivably finish the broccolini on the same tray- in the words of the inimitable Ina Garten, “How easy is that?”

Ingredients

  • 4 - 6 oz salmon filet portions

  • 7 T soy sauce, divided

  • 2 T honey

  • 3 tsp toasted sesame oil, divided

  • 2 tsp grated fresh ginger

  • 2 tsp rice wine vinegar

  • 3 large clove garlic, minced and divided ⅓-⅔

  • 1 ½ # small yukon or red potatoes

  • 1 T wasabi paste

  • 2 oz (4T) softened butter

  • 2 bunches broccolini

  • 1 T neutral oil

  • Toasted sesame seeds and chopped chives or scallions to serve, optional

Directions

  • Mix together 6T. soy sauce, honey, 1 t. sesame oil, ginger, rice vinegar, and 1 clove of minced garlic.
  • Place salmon filets in a container just large enough to hold them in 1 layer with at least 2” sides. Pour the marinade in the container and lay all the filets flesh side down into it.
  • Marinate for 30 minutes at room temp or no longer than 2 hours in the fridge (any longer and the fish will begin to get mushy).
  • Trim the broccolini ends and lightly peel the stems if you want them to cook more evenly.
  • If you really want to minimize dishes, choose a saucepan that is large enough for the potatoes and the broccolini. Season the water with salt, add potatoes and simmer. When the potatoes are nearly tender, add the broccolini to the pan and par cook about halfway.
  • Scoop out the par cooked broccolini to a colander and shock with cold water to stop the cooking. Drain the potatoes and dump them onto a sheet tray (cover it with foil or parchment for easy clean up).
  • Combine 2 cloves of minced garlic, wasabi, 1T. soy sauce, and softened butter.
  • Preheat the oven to 375° (350° with a convection fan if you have it).
  • Arrange the cooked potatoes around the perimeter of the sheet tray. Lightly crush each potato with a potato masher or the flat bottom of a glass. Smear the wasabi butter evenly over the potatoes. Bake for 35 minutes.
  • Place the salmon in the middle of the sheet tray and arrange the broccolini in and around everything. Drizzle the broccolini with neutral oil and a little salt.
  • Continue baking for another 10-15 minutes until the salmon is cooked to your liking and the potatoes are getting browned on the edges.
  • Drizzle the remaining 2 tsp sesame oil on the broccolini.
  • Serve!
