Oven Roasted Tomatoes

- Icelandic Cod Filets
- 4 TBSP of Olive Oil
- Littleton’s Market Oven Roasted Tomatoes
- Salt
- Lightly salt the fish.
- In a non-stick skillet over medium heat, heat olive oil until shimmering.
- Place fish skin side down in the skillet. Spoon olive oil over fish every 2 minutes until cooked through, flipping once.
- When fish is cooked through, pour in the tomatoes and their liquid and cook for an additional 90 seconds, spooning ove fish.
- Plate over Lemon-y Herb Quinoa or Spring Pea & Farro. Serve alongside Spring Snap Pea Salad.
