Oven Roasted Tomatoes

  • Icelandic Cod Filets
  • 4 TBSP of Olive Oil
  • Littleton’s Market Oven Roasted Tomatoes
  • Salt
  1. Lightly salt the fish. 
  2. In a non-stick skillet over medium heat, heat olive oil until shimmering. 
  3. Place fish skin side down in the skillet. Spoon olive oil over fish every 2 minutes until cooked through, flipping once. 
  4. When fish is cooked through, pour in the tomatoes and their liquid and cook for an additional 90 seconds, spooning ove fish. 
  5. Plate over Lemon-y Herb Quinoa or Spring Pea & Farro. Serve alongside Spring Snap Pea Salad.
