Icelandic Cod with Oven Roasted Tomatoes

Ingredients

  • 4 cod filets

  • 2 T olive oil

  • 2 cloves garlic, minced

  • Salt and pepper, to taste

  • 8 oz Littleton’s Market roasted tomatoes, sliced in half or quartered strips

  • ½ bunch flat leaf parsley, roughly chopped

Directions

  • Heat oven to 400 degrees.
  • Salt and pepper the fish. Heat a non-stick pan. Add oil and heat until shimmering. Place cod in pan and cook until light brown. Turn the filets carefully and place in hot oven.
  • Mix the tomatoes, and their juices and the garlic in a small bowl. After fish has been in the oven 5 minutes, add tomato mixture to the top. Finish cooking until fish is 145 degrees internal temp.
  • Top with plenty of parsley.
  • Serve over Littleton’s lemony orzo or potatoes lyonnaise.
