Icelandic Cod with
Oven Roasted Tomatoes

4 6oz cod filets
2 cloves garlic, minced
Salt and pepper, to taste
8 oz Littleton’s Market roasted tomatoes, sliced in half or quartered strips
½ bundle flat leaf parsley, roughly chopped
2T olive oil
- Heat oven to 400 degrees.
- Salt and pepper the fish. Heat a non-stick pan. Add oil and heat until shimmering. Place cod in pan and cook until light brown. Turn the filets carefully and place in hot oven.
- Mix the tomatoes, and their juices and the garlic in a small bowl. After fish has been in the oven 5 minutes, add tomato mixture to the top. Finish cooking until fish is 145 degrees internal temp.
- Top with plenty of parsley.
- Serve over Littleton’s lemony orzo or potatoes lyonnaise.
