Icelandic Cod with
Oven Roasted Tomatoes

Instructions

  • 4 6oz cod filets

  • 2 cloves garlic, minced

  • Salt and pepper, to taste

  • 8 oz Littleton’s Market roasted tomatoes, sliced in half or quartered strips

  • ½ bundle flat leaf parsley, roughly chopped

  • 2T olive oil 

  1. Heat oven to 400 degrees.
  2. Salt and pepper the fish. Heat a non-stick pan. Add oil and heat until shimmering. Place cod in pan and cook until light brown. Turn the filets carefully and place in hot oven.
  3. Mix the tomatoes, and their juices and the garlic in a small bowl. After fish has been in the oven 5 minutes, add tomato mixture to the top. Finish cooking until fish is 145 degrees internal temp.
  4. Top with plenty of parsley.
  5. Serve over Littleton’s lemony orzo or potatoes lyonnaise.
